In this quick 3-minute video, Sean & Cathy are making a Vegetarian Sandwich appetizer. Use some large portabella mushrooms which you marinated in Italian dressing beforehand. Place the mushrooms on a George Foreman grill along with some asparagus. Grill up those vegetables. Get a jalapeno cheese loaf and cut it down the side. Next chop up some roasted red peppers. Once the mushrooms are cooked are ready place them on your sliced pieces of bread. If your mushrooms are too thick just slice them up. Use chèvre cheese (goat cheese) on top, add the asparagus and the diced up roasted red peppers. You can even add some lettuce. Now you are ready to cut your appetizer sandwich. Get some fancy toothpicks which are great helpers in holding your sandwich together. Place your toothpicks right into your sandwich. Next cut into squares and place on a plate. Add some of your favorite dressing if needed.
