    If you knew what HTML5 actually was (the specification not the buzzword), you'd be aware divs, inline images and XHTML 1.0 Strict DOCTYPE's are all allowed.

    If it is HTML5 why the doctype is XHTML 1.0 strict? Check how many divs and inline images are being used. This isn't a step forward but a huge jump backwards... it's all about hype...

    How do I transfer the finished HTML5 file to an iPad? Through iTunes? And is it only viewable on iPad's Safari?

    doctypes are irrelevant. Browsers barely use them anyway. It's markup and use of the new APIs that matter.
