Have you got enough field strength? Raise the field voltage a little.

You need the alternator to run higher RPM than the Engine. A car is about a 4:1 increase over engine RPM.
Then simply use a 12 volt battery to "dampen" the rate at which the engine becomes loaded to prevent stalling.

@hardtimesx2 The alternator is now geared down so it does half the rpm of the engine but its still not enough. I might try a 4 to 1 reduction.

needs like a 3 or 4 to one gearing for what your doping, alternators need high rpm, usually double car engine rpm and cars tend to cruise at 2000 rpm, so find what your engine prefers to run at and gear up for it.

@lezbriddon The engne does about 6000 rpm when developing full power which is a higher rpm that I expected. The alterntor reaches its full output at 2500 rpm. One of the reasons for choosing a 2 to 1 reduction from the engine is to allow the alterntor to loose its output when a load is applied that is too much for the generator as a whole without stalling the engine.
