1 1/2 Cup Soymilk
1 Tbs Sugar (I used coconut nectar)
2 Tbs Oil
1 1/3 Cup All-purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
1 tsp Vanilla Extract

Add soy milk to your blender. Add remaining ingredients and blend for a few seconds until combined. Scrape down any dry flour stuck to the side of the jar and blend again.
Add batter to a hot pan, flipping over when uncooked side is bubbling.

  • I know I made these pancakes before, but I'm pretty sure I didn't use my food processor/blender for fear of overmixing and doing something to the gluten (I don't understand food chemistry, but that's what I read all the time). I made these pancakes over the weekend and used the orange extract - DELICIOUS! This will be my "goto" pancake recipe. Thanks for reminding me how great it is :)

  • What kind of juicer is that? I am very inspired, especially since all of the bad news about juice lead and arsenic. I will give the pancakes a try, too. They do look really easy.

  • @diademy I have a Jack LaLanne juicer. I wouldn't recommend it because I can't get much juice from green leafy veggies and I feel like the fruit pulp is too wet (not getting all the juice) after each use. The juicer was free so I guess I can't complain too much about it. :-) I've heard great things about Breville juicers though.

  • @MokoBrownVegan I have a Breville blender that I like very much. Thanks for the suggestion :) I'll be on the look out for the juicer.
