WOW...this guy really knows how to fillet a walleye...must be from MN or MI or WI. Wow...great job. Most people don't bother with the cheek meat...but they are missing out, as it is one of the best parts of the fish.

@compsol75 i think that depends on whether or not you had a good day's catch or not... some days the beer to walleye is more like 2:1 or even 6:1...

Thanks for visiting my channel, and leaving your comment. The following is a quote from the 2006 Ontario Recreational Fishing Regulations Summary document:
"Ensure you leave at least a large patch of skin on all
fish fillets for identification purposes. Since anglers
often transport various species of fish, it's their responsibility to ensure each and every fillet of their catch can be identified."

Thanks for the kind words HighNortherner. I don't kn ow what brand of knife it is. I do know that he hones it before each use.
