新竹地區入秋後強勁的九降風,造就了米粉、柿餅等特產,而且在百年前也吹出特有的「大麵」。不過早期生產麵,都靠天吃飯,品質不好控制,如今改良成移入室內後,冷風熱風交­替,麵條慢乾緊實,每根麵條要12個小時烘乾。九降風如何幫助製麵?跟著謝佳凌、洪炎山,一起到關西的百年老店,探索吹九降風的麵。
