At an event hosted by SliceNY.com and Gothamist.com, the chef and owner of Fornino, Michael Ayoub, taught us how to make mozzarella. It was enlightening and delicious. Delishening?

  • Dark, poor quality video, way way too much background noise, and not worth watching.

  • Actually, you cannot make mozzarella like that. What you described is Panir or Queso Blanco. Also, if you added rennet to milk that was that hot, it would NOT work, heat destroys the action of rennet.

  • what a jerk,its half way made already,all hes doing is putting the hard part in the water to shape.

  • Yikes! This guy is a chef? He made mozzarella from mozzarella?  Shouldn't you start from milk....?

  • making the curd is very simple. you just heat milk to just below boiling, then add an acid or add rennet, then bam that's it you've got curds.

  • Make the cheese from scratch next time .

    You call your self a chef lol.

  • I agree sound like it's being done in a bar restaurant also.

  • aww this is to bad, it must be a low lighted rastaurant ambient or night time. A camera light or night vision would of helped or increase in light. Thank you for trying do, really wanted to see it.
