PUMPKIN BREAD PUDDING

1 large can Pumpkin
6-10 eggs depending on how fluffy you want it
1 tbsp baking powder
2 tbsp vanilla
1 stick melted butter
1 1/2 loaves of bread cubed up
Spray Pam

Cube bread and set aside in large bowl. Melt butter and mix all ingredients in mixer. Next, pour mixed ingredients over bread and mix thoroughly. Spray your pans with Pam. I used two pans. Bake at 375 for about 40 minutes. Check periodically to see if they're done. Wa-la! All done!


BANANA ICE CREAM

6-8 bananas
Food processor
Your choice of spices

Peel and freeze 6-8 bananas. I cut them in half and put in a bowl to freeze. It wasn't that hard pulling them apart frozen. I suppose you could lay them on freezer paper and freeze them individually so they don't stick. To each their own.

Next, put bananas in a food processor. Blend. It may seem a little choppy, that's because they are still really frozen. If you left them alone for about 5 minutes and then blended them, it would blend creamy but I added a couple tsp of milk. I should have just used water. Anyway, blend again and it should be creamy now. Add your spices to the ice cream and blend. It's now ready to eat. Enjoy!

  • hiya! quick question...where's the sugar in the pumpkin bread pudding? Or did you use pre-sweetened pumpkin? i am on a pretty strict low carbs, low sugar plan, so i would have to use whole wheat bread and probably splenda, but that blended frozen banana looks spectacular.

    on a side note, just be assured that the people who are not on a high horse know that you are on your own path, and you will get there in one way or other. don't forget to treat yourself with kindness.

  • @SusieQNY Opps, yep I forgot to mention the sugar....of course there's sugar...hello, it's bread pudding! Lmbo! Hmmm, I can't remember how much we put in. I'm thinking maybe two cups? Maybe less? I pretty much eyeball everything. I know, not great for the weight loss.
