everyone these techniques will not work against trained fighters, please find a real submission , jiu-jitsu or mma school and put in the time and learn real technique and i promise you you will see right through BM made up technique

I've done guillotines and RNCs with one hand by grabbing my opposite shoulder for leverage, but I feel that your way doesn't get enough grip to hang onto the choke if someone wants to just pry the arm off.
On accident, I did find that a way to try it is to drop your elbow low and use the edge of your hand (thumbside) to move up and cut off the windpipe, as opposed to using the forearm.

Have you tried this yet? It is much, much more secure than it looks at first glance. Also, this variation is not a windpipe choke, it's a blood choke.

I'll try giving it a shot next time I've got a guillotine in, I'm just worried about the opponent reaching up and peeling the arm off.

If you are worried about your opponent peeling your hand off, then just cover it with your other hand. Make sure to shift your hips to finish the choke so your opponent doesn't have time to defend.
Try it out a few times against a non-resisting partner so you get the technique down before you try it out against a resisting opponent.
