its never perfect when you are trying to do a demo in 3 minutes. Its a demo, not an exhibition. Also, for those who say that she wasted a bag, only the at home decorator making an occasional birthday cake really uses disposable bags. Get a good plastic coated linen bag and you don't have to worry about waste.

For those of you saying she is terrible at smoothing the icing, your icing is not perfect after you either use an icer tip or apply it with a spatula. You go over it once just to get your icing flat, without the hills and valleys in it. THEN you go back over again, usually with an icing smoother, which looks like a bench scraper without a handle. Some choose to go back over it with a Viva paper towel or typing paper, but that step is not usually used in production bakeries.
