Well, her clothes are made of her hair, so it could be that she got some strings pulling the triggers. In the late stages of the game it is hinted that witches also have some degree of psychokinesis, maybe she uses that to fire the guns.

Her suit is made of her own hair that can turn into huge fists or a dragon to smite enemies, right. I assume she can pull the triggers on her gun shoes with a just few strands of hair.
