@nzo1 I do realise that I did say that but what I meant by that was a sole like fish. That was the intention of the sentence I wanted to write. On that basis I do apoligise for the false description of the fish I gave but that wasn't how I meant it. Thanks Ian

@MackyB06 - because you said it was a lemon sole. I caught enough of these when I was working on commercial fishing boats, so I consider myself an authority on this.
Brill is more expensive than lemon sole, flounder, fluke and whatever else people think this is called. If that's the case, then we were wrong, the wholesalers were wrong and everyone paid far too much money for it.
I don't have any interest in how good/bad the filleting is - I merely point out what the fish is.

@nzo1 Of course it is. All I was saying or trying to say is that there is easier methods to fillet fish similar to this such as sole, plaice etc. Obviously judging by this video this guy is trying to attempt a quarter cut in which he hasn't done a bad job. And by the way I am quite confident and professional with the trade I'm in which is butchery and fishmongery, so who are you to suggest to me what trade I should be in?
