I just want to know how they get people to volunteer to do these things. What do they tell them? Isn't it ever odd to bring in random people to do this work? Wax the floor around expensive vases? Work a cash register?

@NeoSlith It's a job, probably through a work agency. The agency finds you work, sometimes its a small job for 1 day, sometimes a few days. When you run out they find more.
