Dude, Lucas sanctioned the expanded universe and has worked closely with many of the writers, The EU is considered secondary canon, not some parallel universe. It’s the continuation of the stories true to George’s vision, which is why he's so involved. Not sure why you hate Star Wars in book form, but the Fett lives whether you like it or not. But if you want to pretend that he dies, then I guess that’s sadly your choice. You're missing out on alot.
