  • The plums we use are green, unripe plums. They are only sold for a short time in the spring and are not really good for anything else unless you want to pickle them. Perhaps you can find someone with a plum tree in your area and get some of their unripe plums - it might work!

    There are variations of umeshu that use this same method, including cherry, apricot and coffee!

  • Ume shuu is the only alcoholic beverage I have ever brought home form travels abroad. The plum wine available here in Canada is crap.

  • Thank you for the video!! Just made my first batch of 梅酒. Only I had to use vodka as 焼酎 is not very easy to get where I live. Hopefully it will be good though! Thanks again :D I hope your 梅酒 was おいしい!

    Just wondering if you've tried a variation of the umeshu which uses young/unripe apricots? Trying to find ao-ume here in Australia is a nuisance (if not downright impossible) but I've read on a couple of websites that ao-ume is very similar to unripe apricot - if anything, closer to an apricot than what we usually call "plums" - so I'm wondering if the result is somewhat similar?

    Going to have to find a white liquor substitute as well. :P Might use a shochu/vodka mix.

  • Can you do this with ripe plums? And while aging, how should I store it?

  • If you get a higher proof alchohol (higher than 50%) would be good, you can do this with ANY fruit or herb, and no need to worry about bruises. I've done mango liquor! Amazing! Put mangoes in the highest proof white rum you can find for 2 months, perfect!

  • From Okinawa -- Clean and dry plums go in the freezer for 24 hours then we layer the plums and sugar Then put the lid on and let rest. it will usually take slightly over a week for the sugar to dissolve. Then once the plums are shriveled and sugar dissolved you remove the plums. But without the alcohol your kids can also enjoy the health benefits of the Ume and you can dilute it even further ( 10/1) for a great workout drink.

  • SUGOI!!!! Ume shu is my favorite drink! I like all kind of ume shu. I taste one made with black sugar from okinawa that was pretty interesting too. Does anyone know if we can order ume shu on the internet (I live in Canada).
