Hi...one of my current favourite herbs is Purslane or "Pigweed" [Portulaca Oleracea]. You would be surprised at just how nutritious it is. It is very high in Vitamin C and Vitamin A (our anti-poisoning and anti-radiation anti-oxidants respectively). It is an excellent source of calcium, iron and Omega-3 fats (believe it or not); but most importantly it is exceptionally high in magnesium. Magnesium is used in over 300 enzyme pathways in the body - for muscle relaxation, bone formation, energy generation, production of hormones and neurotransmitters, protein synthesis, blood sugar control, antibody synthesis, hemoglobin synthesis, voltage stability of nerve cells and cell membrane stability - just to name a few things :-) According to the doctrine of signatures in Nature, Purslane's leaves are in the shape of breasts and when plucked, a clear milky fluid drips from the break - when you hear what nutrients are in it - is it any wonder it was looked upon as a fantastic supplement in creating highly nutritious breast milk. The name itself - portulaca - comes from the Latin 'potare' meaning 'to carry' and 'laca' meaning 'milk'. Magnesium is lost whenever we get dehydrated. Have a look.

I just discovered it as food... eat it raw rto preserve antioxydants. It has a lot of Omega 3. Just made a salad with arugula, raw beet, fennel and onion.
