Phenovelnoms: Bunnicula & White Chicken Chili!

White Chicken Chili

5 cans of White beans (Cannelini or Great Northern)
2 green chili peppers or 1 can of green chilis
1 cup chicken stock
4 chicken breasts
1 medium onion
3 cloves garlic

Coat chili peppers in olive oil and place under broiler under skin is charred.

Dice onions, garlic and chicken, sautee until browned on all sides.

Drain and rinse beans.

Take skin off of peppers and dice.

Add everything to your crockpot and cook on high for 4-5 hours.

Top with sour cream and White corn tortilla chips

It is definitely getting to be chili weather here. I love cooking chili on a cold winter's day. It heats up the house and me! I'm a huge fan of black beans so I cheat on my white chili and add a few cans. I've never thought about adding roasted chilis so I'll give that a try next time, which by the way the temperature is dropping, will be this week.
