【材料】:去骨雞腿2支、黑棗12粒、杏鮑菇3枝、香菜少許、白醋半碗、細砂糖半碗、醬油膏2大匙、白芝麻2大匙、太白枌適量、酒1小匙、醬油適量
【做法】:
1. 杏鮑菇切塊放入太白粉抓勻。
2. 雞腿肉上剁幾刀去筋後切成塊狀,再放入醬油膏拌勻醃漬。
3. 黑棗泡入米酒靜置約20分鐘。
4. 把杏鮑菇入油溫140度的油鍋中,炸至金黃色後撈起擺盤。
5. 再把雞塊入油鍋炸至外皮酥脆後撈起。
6. 鍋中先放入【白醋、糖(糖1:醋3/4)】、黑棗煮滾後轉小火,再放入幾滾醬油煮至濃稠狀,此時放入雞塊、白芝麻炒到湯汁收乾即可起鍋,放在杏鮑菇上即完成「蜜汁雞塊」。
