Day 15
1/3 cup olive oil
4-6 cloves of garlic minced
1/2 onion chopped
4 cups tomatoes (chopped or canned) or 3 cups tomato sauce
1 tsp oregano
1 tsp basil
1 tsp salt (optional/to taste)
1 tsp sugar (optional/to taste)

sautee garlic and onion until carmelized on medium heat
add oregano, and basil
for 1 minute to release flavor into oil.
Add tomatoes bring to boil on medium high, then turn down to medium low and simmer 15 minutes, if using chunks of tomato puree with immersion blender, or food processor.
add salt and sugar if using
simmer another 10 minutes or more until you get the consistency you like. Remember it will thinken about 15% when cooled.
NEVER put warm pizza sauce on raw pizza dough.

(This recipe can be used to make your own spaghetti sauce as well, you may want it just as thick, or thinner, it's all up to you!

I have a very good basic pizza recipe from THE SPICE AND SPIRIT OF KOSHER JEWISH COOKING & this has been a blessing for me for decades, but the sauces are better when we don't buy 'em ready made. Yup, if the garlic burns, the whole dish is ruined. Looks fantastic! You had a pizza shop! Cool! I am gonna try to vid a mom & pop place near the airport in Paris, France, where their pizza is from scratch & is just about the only good pizza around here. Gotta get consent.

  • @slobomotion Yup, had a pizza place for 3 years. Sadly, as is the case in lots of area's I had an artisan pizza shop that should have been better located, the area changed A TON between the 2 years I planned the shop and the 3 years in business :( I sold it, and it is now, the essences of what is was is gone... I still see many of my old customers who bemoan my leaving, but what could I do, I just didn't have enough of them, sniff, I miss it :(

  • As long as it is about how you FEEL and not about how you LOOK..too many people are dieting for the wrong reasons.Trust me..I am over 300 pounds..eat like a sparrow and have had gastric bypass surgery..so it HAS to be about how I feel..not look. And turst me you are beautiful inside and out. Anyway I will stop before I start to sound schmaltzy!

  • @CanadianPatriot1973 I totally hear you. I do tons of videos of my street, rue de Strasbourg, and there is a lot of foot traffic but it is just not easy for many of the businesses here! I had an American pal in Le Bourget who watched his nabe totally change near here, everything has to be so strategic for business, you know? You learned a lot! So did I, I had a financial advisory biz in NYC during the hell recession of 1990! Yeow!!!
