Great recipe, but there has to be a germ-fest going on in that kitchen with you touching the meat, then the faucet, the handle, utensils, etc.

Hahaha I just showed my dad how you cooked this Godoriniz, he almost soiled himself. He's gana buy a case (yes, here in Los Angeles they sell them by the case in Mexican markets) and he's looking for his George Foreman grill right now haha.

Might be kinda tough, considering the fat that's on a duck. It would probably work better with squab, but cooking times would vary.

All three stores should carry game hens. If the larger markets don't have them fresh, look for them in the freezer section. They're still a good product. Hope that helps.
