Great video...i have a question. This is my first year growing and I have several types of peppers. One of my orange bell pepper plants is EXTREMELY healthy - there are over 40 peppers growing on it right now. How do I preserve the seeds from a pepper so that I can grow from seed next year.

Yes; Most peppers do do fine in a 5gal container.

I know it may sound like a long time but 3-4 months and dried seeds can be planted. That way you can correlate it to the season start.

If I get my seeds straight from a Pepper, do I have to let the seeds dry out first before I can plant them?

I would say YES!
I have tried it non-dried before and it did not work. Drying the seeds out first will ensure proper germination. Since the season is almost over for starting from seed - to - plant, you may want to try the local nursery, > hirts dott kom, or > chile plants dott kom.
But yes my peter red(s) are doing excellent, and I have even done it with melons bought from stater bros [dried and planted].
