Mom's Chaldean Dolma - Recipe - How to make The Best Stuffed Grape Leaves on Planet Earth!

This is my Mom's own recipe for making Chaldean Dolma. It is the greatest you will ever eat period! I love it and can eat it everyday for the rest of my life.

But no matter how you like it, this is a great starting point for making some great Dolma. Dolma pretty much means stuffed grape leaves/vegetables. It's the word we use for this dish.

Ingredients

Filling/Stuffing/Forcemeat

3 Cups of Rice (Moistened & Cleaned with Water)
3 Pounds of Ground Round Beef
4 Cans of Tomato Paste (6 oz.)
1 can of Diced Tomatoes (14.5 oz.)
3 Chopped Yellow Onions
1 1/2 Chopped Heads of Garlic
4 Tablespoons of Salt
2 Tablespoons Mixed Spices (Baharrat Mid-Eastern Spice)
1 Tablespoon Semaghh (?Red? Mid-Eastern Spice) Seasoning
1 Teaspoon Garlic Seasoning
1 Teaspoon Citric Acid (Lemon Douzi)


Vegetables for Filling

Bag of Grape Leaves
8-10 Large Yellow Onions
3-4 Cubanelles (Large Peppers)
2-3 Squash
1 package of Celery (16 oz)


Very Basic Cooking Instructions

1. Prepare Onions & Other Vegetables
2. Thoroughly Mix Together Filling Ingredients
3. Stuff Grape Leaves, Onions & Other Vegetables
4. Place in Large/Deep Cooking Pot
5. Add 2 Cups Water, 1 Cup Lemon Juice, 1 Tablespoon Salt, & 1 Tablespoon Lemon Douzi (Citric Acid) to pot
6. Cook For 1 to 1 1/2 hours
7. Enjoy
