Wow, Nobu in Lima, Peru!
He shows you what you get when you mix Peruvian cooking style, ingredients, spices, and seafood from the Peru coast with Japanese cooking technical and cooking equipment. When both cuisines are mixed, a new cuisine develops called Nikkei in Peru (Peruvian - Japanese mixed cuisine).
