Raw means uncooked or anything that does not destroy the essential enzymes in the food through heat. Nut Butters are raw.

seriously, why would you criticize what he is doing? The only ingredients in this were raw macadamia nuts. Nothing else. He should be congratulated for passing on these amazing recipes.

This "butter" "process" integrates an intensely violent energy into the nuts to break down the fibre to create the butter. That is why it is a stretch to call the result raw. Uncooked, yes, but raw... that's definitely stretching it a bit. Forget about words and look at whats happening.

It certainly is not a natural process... in the way that heating food is. It is transformed unnaturally. Raw macadamia nuts are what you buy in the bag.

Usually the reason we cook food is to break down the fibre to make it more digestible (think of potato, steak, kale, onion etc.) and therefore subjecting food to 100 degrees is also "processing" food. Yes, "technically" it is a different to raise food through 100 degrees than to expose it to thousands of rotations of very sharp blades at high speed in a very confined space... (though the amount of energy in watts/joules applied *directly* to break down the fibre may be similar) ... continued...

the macadamias have to become VERY intimate with sharp blades spinning tens of thousands of times to achieve this "butter"... is this to be ignored or is this an ingredient - to call any food "raw" after being transformed with such energy integrated may be stretching it a bit.

using a food processor is just that processing food. Cooking food is utilizing a heat or smoke source in which to change the food by means of temperature usually greater than 100 degrees. This is in no means "stretching it a bit.
