咖哩螃蟹粉絲煲 阿基師教你做

食材:
當令螃蟹1隻、粉絲2小把(泡溫水)、青蔥1根、薑半塊、麵粉、海鮮高湯250cc、紅蔥頭末、奶油1小塊

調味料:
米酒1大匙、咖哩粉1大匙、鹽巴、2大匙椰漿、番茄醬

做法:
1. 備料:把蔥拍扁切段、薑拍扁切末、粉絲剪小段、螃蟹處理乾淨後、切塊狀,備用。
2. 起鍋入4匙油+少許奶油,爆香紅蔥頭末,用濾網濾渣將油嗆入咖哩中,紅蔥頭渣留著備用。
3. 螃蟹上沾少許麵粉下鍋炸,起鍋前再將蟹斗下鍋一起炸10秒,即可一起撈起濾油備用。
4. 同步驟2鍋底,爆香蔥段、薑末,再放入炸過螃蟹、高湯、椰漿、2/3量咖哩、粉絲、紅蔥頭渣一起混合拌勻,可加入少許蕃茄醬加色,可依個人喜好加鹽巴調味。
5. 預熱砂鍋,將1/3咖哩拌入剩餘奶油,放入砂鍋中加熱,最後將咖哩螃蟹料頭全數倒入砂鍋中,加蓋淋上米酒嗆香即完成。
