Jack does one of his best videos. Amazing flavors come together in this show.
Here is the recipe:

Hot Pineapple BBQ Ribs

RIB RUB
4 tablespoons coarse salt (kosher or sea)
2 tablespoons light brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon ground allspice
1 teaspoon chili powder or paprika
1/2 teaspoon ground cinnamon
3 racks baby back pork ribs (4 to 5 pounds, total)
Directions:
Make the rub: Place the 2 tablespoons of coarse salt, brown sugar, black pepper, granulated garlic, onion powder, allspice, chili powder, and cinnamon in a small bowl and mix with your fingers, breaking up any lumps. Sprinkle the rub over both sides of the ribs, rubbing it onto the meat. Cover the ribs with plastic wrap and let cure in the refrigerator for at least 1 hour or as long as 4. The longer the ribs cure, the richer the flavor will be.

HOT PINEAPPLE BBQ SAUCE
Ingredients:1 tablespoon vegetable oil
1 medium onion, diced (about 1 cup)
2 cloves garlic, minced
2 teaspoons fresh ginger, minced
1 to 2 habanero peppers, seeded and minced
2 cups pineapple juice, plus additional if needed
1/3 cup dark brown sugar, or to taste
1/4 cup distilled white vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon coarse salt (kosher or sea), or to taste
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice, or to taste
1 cup finely diced fresh or canned pineapple
3 tablespoons fresh cilantro leaves
Directions:
In a large nonreactive saucepan over medium heat, sauté the onion, garlic, ginger, and chilies until soft, about 5 minutes. Do not let brown.
Add the pineapple juice, rum, wine, brown sugar, vinegar, and Worcestershire sauce. Increase heat to medium-high, and reduce the mixture by one-third. Add the salt, pepper, allspice, and pineapple and cook over low heat for about 20 minutes.
Add cilantro into mixture and cook for 5 more minutes over low heat. If the mixture seems too thick, add more pineapple juice. Adjust the seasoning, adding salt or allspice to taste.
Cover and refrigerate if not using immediately. Sauce can be made up to 3 days ahead.

  • Hopefully that boy of yours will start up his own cooking with jack show just like his good father. I could see it now. "Cooking with Jack Jr" So you better teach him and teach him well if he does decide to go down that route. I will subscribe to him too.

  • jack! another knife tip is to rock the knife and move the object your cutting under the blade with you bent fingers like u have them now, you just push with the palm of your hand or your thumb, the tip of the blade should never leave the board it feels like im in more contorl when i do it, and the chefs i have at school say its safer =D just thought i would send a tip your way!

    Yes you probably can. Just make sure that you cook your chicken fully :)
