I don't know anyone who's ever used water. ... ALWAYS clam broth. Clam cakes shouldn't be greasy and smooth. That means you whipped all the air out of them. You're NOT supposed to STIR the batter. You're supposed to FOLD it so the clam cakes come out light and fluffy. They should be irregularly shaped with peaks and valleys and light , CRISPY and golden colored and they should be light and fluffy inside.

I'm sure they're very yummy for clam lovers. When it comes to seafood I'm pretty much strictly shrimp and flounder though. Love the Yank and Scot thing, LOL. You're going to have to keep an eye on Gary. First he scarfs down all the cawffee towers, and now it looks likes he's hell bent on doing more damage than anyone else to those clam cakes:)
