Today we return to Morimoto in New York City to get a lesson in updated Japanese fare from the Iron Chef himself. This time, he's making a fresh and flavorful tuna pizza that is a creative and modern take on traditional sushi.

Tip: Distribute ingredients equally to maximize flavor of each serving
Tip: Adding Tabasco sauce will give the flavor a bit of a kick
Trick: Sweet eel sauce makes the tortilla crispier and adds flavor to the dish
Technique: Slicing against the grain increases the tuna's tenderness
