I would recommend you to start by taking a look at the website of Speech Recognition, whose author is Bernd Plannerer (just google this).
These people have done a great job. The demo you've watched was implemented by using their examples. Bernd Plannerer is a kind man, I'm sure he'll be pleased to help you as well.
