Greetings! Yet another batch of pressed cookies! This time my moms famous Almond Cream Cheese Christmas Trees. We are doing another variation on a theme. We took the recipe from the snowflakes and tweaked it, changed up the flavors, added some color and changed the press plate to make these cute Christmas trees. My girls really enjoy making these with me because it is their job to do the decorating. I let them go crazy with the colored sugars and sprinkles and they always come out lovely. It is these times in life that make special memories and give my children a desire later in life to share the same moments with their own children. It helps to strengthen our family and it makes us happy and gives us a sense of what is really important.
The recipe for these cookies is simple.
2 Sticks butter, softened
1/2 brick or 4oz of cream cheese, softened
1 egg
1 teaspoon vanilla extract
1 Cup granulated sugar
2 teaspoons almond extract
2 1/2 cups flour
1 teaspoon baking powder
Green food coloring
Festive sprinkles
Cream butter, cream cheese and sugar until light and fluffy.
Add egg and incorporate well.
Add extracts and incorporate.
Mix baking powder with flour and add all at once to mixer bowl. Mix until well combined.
Add green food color until it reaches your desired hue. Mix well and make sure you don't have streaks.
Put dough through a cookie press fixed with a Christmas tree plate. Decorate with colored sugar and sprinkles.
Bake at 325 for 11 minutes. Remove from oven and allow to cool on pan for a few minutes before removing to a rack to cool completely.
Store in an airtight container layered between sheets of parchment paper.
As you can see, you can take this recipe in any direction, change up the extracts, change the color or don't add any and change the plates on the press and you can make a vast assortment of cookies in no time. This recipe makes about 12 dozen cookies or 144 cookies. That's a lot of cookies for this amount of dough! You don't really have to do a lot of work to have a fantastic result.
