A speculation on why monasteries were pillaged: Popes and kings wanted to conduct wars, which require a lot of wealth. Monasteries had it. But they were popular as repositories of traditional knowledge (including about Jesus) and as innovators- one third of European males joined them. How could the populace be turned against them? By inventing heterosexism and its partner, homophobia. But to sell these, they had to invent a new Jesus- nothing in the original Jesus' life and teachings supported heterosexism/homophobia.

First of all a big LOL to 8:15. Stunning image.....
I saw a tv show once where there tried to model a face for Jesus out of the knowledge of what ppl looked like then. They recreated it from a "common" skull. That way a "real" person came to life. It was very interesting. They also showed him without beard and wearing his hair short(ish), stating that this was the fashion at the time.
I guess his looks where changed to fit into personal preferences of the time and artist.
