I think it could be considered many types of music...Americana, folk, country...the instrumentation is usually the least important element to consider, if that's what you're driving at.
Artists like James Taylor, Elvis Costello, Gram Parsons (especially with the Flying Burrito Bros.) bent and sometimes broke all the rules concerning what country/rock/folk music sounds like.
