He didnt tell you that he just took the bolle out of the freezer. This happens all of the time with my freezer . You put a bottle in the freezer let it almost reach freezing point then take it out and either move it or expose it to the air and ice crystals form no magic here.

@MrJoethegr8 So it's not ice, it's just crystallized water. I do think, that water has some chemicals in it for this to happen. Otherwise it'd be impossible.

The way it works is almost how chrystals form in a supersaturated solution (such as rock candy). The water is so still in the freezer, that there is no "seed chrystal" for the ice to build on. As soon as you jostle the water, a few molecules hit eachother and end up creating a seed chrystal. Just so you know.
