But then again people who are true celiacs will normally gain weight initially on a gluten free diet because their intestines start healing and food nutrients are actually being absorbed. But the initial stages of weight gain is healthy and beneficial and is not usually due to inflammation or water retention. In the long run, your body should run more efficient on a gluten free diet and should be able to function better with less calories which should result in weight loss.
