Stephanie, this is absolutely delicious! My husband and I had it for lunch and loved it. It's a keeper.
I did a shortcut on the beans---just opened a can, added the ingredients and simmered it for about an hour--which worked fine. Added the extra coriander to the beans, as you suggested.

do you put cumin and coriander in both the beans and in the shrimp marinade? If so, how much in each?

Hi savelincolnplance: Yes, cumin and coriander in both - 1 teaspoon in each. If you like the taste of both of these spices than add a bit more to the beans only as they can take stronger flavor than the shrimp. Let me know how it goes.
