In the competitive world of restaurant management it is key to select the right processes to best serve customers and to maximize return. This WITNESS simulation model shows 2 alternate strategies for seating customers based on group size and table availability. The model is based upon a busy customer profile, hostess resource and timings, menu service times and other data that defines the process of serving customers. The simulation model shows that reserving larger tables for larger customer groups is a bad choice (in this case) and leads to longer queuing times and lost custom!
