Meyer Lemon Puree

Ingredients:

200GmMeyer Lemon Zest (using peeler)
1PinchTumeric
1QtSimple syrup
1EaLemon, juiced
15GmLemon aggrumato oil


•Blanch lemon peel in boiling salted water for 45 seconds. Shock & drain
•Add lemon peel to simple syrup with tumeric & cook till tender. About 10 minutes
•Separate solid from liquid & reserve liquid.
•Vita prep peel with liquid, lemon juice & lemon oil as needed.
•Season with salt & pass through tamis.

  • @TheColonelsKitchen " ea" is short for each.... meaning 1 each lemon or 1 lemon per recipe.

  • What does "Ea" mean (as in "1EaLemon")? ... Even Google can't answer that one!

    I find it supremely frustrating when cooks don't use regular terminology. If you want to cook for the "masses" then you need to use language MOST of us understand!
