Ingredients:
1 pound cod or any white fish

Sauce:
1/2 cup mayonnaise
1/2 cup sour cream or yogurt
1 teaspoon dried cilantro
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon cumin
1 Tablespoon pickled jalapeno
1 Tablespoon lime juice

1/2 cabbage shredded
corn tortillas

Batter:
1 cup flour
2 Tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup beer or water

Extras:
avocado
tomato
lime wedges
salsa

This ordinates from Baja Mexico and is the San Diego version.

  • I've made your recipe several times with great results, but lately it seems like they're browning too fast on the outside and not cooked enough on the inside, any tips on how to avoid this? What kind of oil should I be using and is 350F optimal temp? Thanks!

    Hum.... perhaps the oil was not new and fresh?

    I like to use oil that is heated to 350F to 375F ... around in that temperature.

  • Great recipe! Thanks for the video. I love to cook also. I have become a great cook. And the first thing I do to every recipe is figure out how do prepare it with the least clean up. If you don't mind some tips. A flexible cutting mat from the dollar store. I store my mat on the side of the fridge with a magnet. Rinses clean under the faucet. I use the mat to save clean up time of the counter top. And just use your chefs knife to slice thin, practice, practice. Saves clean up of your slicer.
