I think it's wrong to say that to get an amazing balck and white shot, you've to start to a cool and well exposured photo. Thinking black and white it's totally different. It'a about color tones, about shapes and (most importantly) about contrast. A great black and white picture it's often not so good in its "colored convertion". I hope you get what I mean... Thinking black and white is different, this is just a workflow idea. If your images are right in colour when you convert them all to black and white they will be close enough to use as proof images. I know exactly what you mean. Some images work in black and white and some don't.
