    this guy is one of the best bartenders in the states at the moment. He spends weeks caring for barrel aged cocktails, and re-creating the way the old pre-prohibition bartenders made drinks. To say he doesnt care about the drink is slightly odd, just because he knows how to prepare a drink with care and speed is nothing to sneer at.

    The sour has come from the fresh lime juice anyways.
