In our region, the end of October or early November is when I start putting my cold frame structures in place. The plants can handle a few freezing nights unprotected but you dont want to expose them to anything in the mid 20s. The goal is to have the plants at 80-90% maturity or to have the plant that will be overwintering just appearing out of the ground. With shorter days and cooler temperatures the plants will stay in a holding pattern with little added growth but will stay fresh till you are ready to harvest them.
A cold frame is basically any structure used to protect plants from the weather. They can be elaborate glass permanent structures, mobile hoop houses that can be moved into place once crops are established, purchased wood or plastic box cold frames or simple structures made from items from salvaged items. Well take a look at some of the cold frames weve made use of.
