Kapporos is a very jewish ritual, and is not an "offering to our sin". It's done to arouse repentance for our sins, and to perform one last act of charity before Yom Kippur. The ritual of kapporos is done before yom kippur in order to give us an image of what death is really like, before we are judged for the upcoming year. It's the last "boost" to arouse repentance. The main aspect is the charity. Some people have the custom of performing the ritual on money, which is given to charity afterwards.

According to Christian's interpretation, Messiah has to be cut off. This is quoted from Jewish source and you cannot doubt this.
