It seems I can't follow the g/s. The altitude hold is turned off, but then I start to descend really fast, past the g/s. What am I doing wrong?

Good flight but your landingspeed was to fast and your touchdown was very hard, you have to turn off the master autopilot and flare before touchdown. Otherwise it was good.

Can I turn off the beep sound in any way? I really hate sounds like that. Please tell me if you know. Very good video, thank you

Well, you don't have to if you don't want to! As far as I know, you can turn it off, so that you can flare the aircraft manually, in order to get a smoother landing. What you need to do right before landing, however, is to disable your "autothrottle" so that you can adjust the speed manually, and bring the engines down to idle!
Regarding the speed, you're probably right! But I always land at random speeds, simply because I don't know the proper speed for each aircraft :)
