Liver has an unmistakable flavor but it's not as gamey as heart. Who hasn't had pate'? Pate' is liver and herbs.

wow i remember this episode...i was disappointed when the Korean chef lost which i am pretty sure that being a woman contributed to her loss...awesome show but biased on several levels...

Korean royal court cuisine was the style of cookery within Korean cuisine traditionally consumed at the court of the Joseon Dynasty, which ruled Korea from 1392 to 1910. The Korean royal court cuisine brought all of the unique regional specialties together for the royal family. Yeah, you are just being dubious. Open a book or just Google it.
Liver is about the only food that I have come across that I do not like but I still would have liked to try the ones these chefs prepared. Taking nothing away from the Iron Chefs but I think that the challengers start off with a huge disadvantage in having mostly Japanese judges on the panel and having "generic" sous chefs to assist them. Give the challengers their own sous chefs and have a wide variety of tasters and I think that the ICs records would not be so inflated.

They could make blind tasting. The judges wouldn't know who cooked which.
There would also be no permanent guest judges. If the ICs are consistent, a regular would recognize it. ICs would also know how to cater to them.
Judges from different background (nationality, cuisine, etc.); 1 for the IC and challenger. This ensures that all is fair (as far as judging).
Challengers allowed to bring their own assistants. This evens it for foreign challengers who can't speak or understand Japanese.
