in a bowl break up the curd into small peices. bring a pot of water to a boil and salt liberally (less than pasta water). pour enough of the hot water over the curd to cover. with a large spoon stir the curds and start to fold them on top of eachother. after a minute of this drain off most of the water and set aside. again cover with more hot salted water. continue to fold and knead the curd together until the texture is smooth and most of the lumps are gone. drain off most of the water and discard it. (this is where we started the video) pull off peices of the hot curd and knead by hand till just smooth (do not overknead) and form into balls. you can put these into cold or ice water directly or wrap in plastic for a more uniform shape. the curd and water will still be very hot so use gloves if you're a pussy. once the mozz balls are chilled you can use the cloudy salted water to store them in.
