oil is not acidic, it contains glycerides and fatty acid chains. The methoxide is a catalyst which esterizes the oil, i.e breaks down the FFA's. I understand that you are trying to simplify, but when you say oil is acidic its misleading.
The videos are awesome, but I didn't see where the washing and drying procedures are explained... are there on youtube? but anyway the videos are very helpful, thinking to try and make it on my own, as an experiment :D
