http://www.winepleasures.wordpress.com Sant Sadurní d'Anoia based cava producer, Rimarts show a group visiting the Penedès with Wine Pleasures how they do the degorge (expelling sediments after the second fermentation in bottle). Rimarts say that this is the only way to guarantee that all of the fine sediments are removed from the bottle. Freezings the sediments and using a machine to turn (riddle) the bottles will not guarantee this. So if you are drinking mass produced cava at home be prepared for possible head and stomach aches! Later in the wine tasting we tried the Brut Reserve, Gran Reserva (4 + years), Chardonnay & Uvae (fermentation in oak)
