Cucumber is not an Ingredient in the Real Authentic Lebanese Tabbouli. Unless the meat in a hamburger is made out of corned beef

@haboubeh We love tabouleh too and we don't mind to add one more vegetable to it like cucumber. But that doesn't mean that when I don't have cucumber in my fridge I don't prepare tabouleh.

@jsaas66 Many places I have eaten the tabouleh this is the version I liked. It is not difficult to leave the cucumber out of the salad if that's what is desired.

The essence of a succulent Tabouli boils down to the use of the best quality extra virgin olive oil that should be generously poured over the mix (min 60 ml for this quantity) until one sees the vegetables turning from matt to shiny. one last note: if you dont have very tasty ripe JUICY tomatoes along with FRESH E.V. olive oil, omit preparing TaboulI until you got them around.

It also calls for about 1/4 cup of the finest ground bulgur (brown is more flavorfull than white bulgur but requires 5 minutes soaking in cold water befor mixing with the vegetables), plus a teaspoon of sweet ground pepper (not the black used to season steaks) and an optional small pinch of ground cinamon that could elevate the taste of freshness of the vegetables. Sweet White or yellow onion could substitute the scallions.

Of course Tabouli is of Mediteranean origins, in particular, of Levant coutries. However, I beleive that the Lebanese Tabouli happens to be the most renowned/praised amongst the variants prepared by other neighboring countries. Now, The Lebanese original version would call for 50% more chopped tomtoes, avoiding the addition of cucumber and chili powder by all means.
Peeled and seeded cucumber IS part of genuine TABOULI - don't know why Americans insist on misspelling it. Had this in many Lebanese restaurants and from many recipes. Because it's not just a Lebanese dish, but a Mediterranean dish, it can vary from region to region. Cucumber may be a Greek influence.
What is NOT genuine is the American penchant for making the main ingredient bulgur -- bourghal [sic])-- which is cracked wheat, parboiled and dried.
UGH! Awful, especially the packaged varieties.
