@62halee Actually, they can. Imports online. And true local Vermont sharp cheddar and Gruyere is excellent in the dish. Wisconsin also has good cheeses but you've got to get the true local ones. You just have to go to a cheese specialty shop. That grocery store junk is awful.

Can you tell me what brand of cheddar cheese you used and if it was med,mild/sharp. I live in San Diego and I cant get trini cheese :(

Chris: Besides the cheddar cheese, I usually add a small container of cottage cheese and some grated Parmesan cheese in it. I know that is not the Trinidadian way but that is how I make it now. It adds some more flavour and comes out moist.

the long macaroni is so so good. i didn't think it would make a difference until i tried it. we found two packages on clearance at a cheese shop on a trip to chicago and haven't found it again. boo hoo.
