I usually make rosti using raw potato. But there is a sense is boiling the potatoes first before grating them as raw potatoes secret too much moisture and also changes color if not covered. But rosti made with raw potato is less time-consuming.

I love Rösti coming from a German city that borders Switzerland but the way she makes it is the way of the people in Bern. There is also a version made with raw potatoes

@chenhuixian92 It is much easier to peel them right after they are cooked that way you waste much less potatoe. After you peel them I find it best to pu them in an air sealed container (e.g. Tupperware) so they don't taste like fridge
very interesting.... Im thinking about making this dish for my end of the year country project !
